British Colonial Hotel Launches Monthly Brunch Takeover Series with Poinciana Magazine
The British Colonial Hotel is introducing a new monthly brunch takeover series, kicking off on Sunday, October 25, with Poinciana Magazine as its first featured partner.
The collaboration will bring a distinctly Bahamian twist to the hotel's popular brunch experience at Tamarind Market Place Restaurant, combining the culinary expertise of British Colonial Executive Chef Antonio Williams with menu suggestions from Poinciana Magazine's team of contributors.
For the inaugural takeover, the Poinciana Magazine team was invited to share some of their ultimate Bahamian comfort foods, drawing inspiration from the flavours, ingredients, dishes and culinary traditions that have shaped their personal experiences.
The magazine's contributors include Editor Nikia Wells as well as Randia Coakley, Dr. Vernon Davis, Gabriella Suighi, Leah Cooper and Keiani Thomas, along with U.S.-based contributor Devaughn Woods.
In addition to Tamarind Restaurant's diverse brunch buffet, guests will have the opportunity to enjoy a selection of dishes inspired by the team's recommendations.
Wells' suggestions include conch and grits, Grand Bahama-style fried fish and guava and banana panny cakes, while Coakley recommended a traditional Bahamian combination of conch salad with mayonnaise, yellow grits and pear (avocado).
Thomas selected another Bahamian breakfast favourite, boil fish and Johnny cake, while Davis suggested a sweet twist on brunch with guava butter French toast topped with coconut, accompanied by fresh watermelon juice or coconut water.
Suighi's contribution brings a flavourful addition to the bread station with Bahamian-inspired pepper jelly.
The team's additional suggestions include coconut Jimmy and fever grass tea, further highlighting the traditional flavours and ingredients that remain an important part of Bahamian food culture.
The collaboration celebrates the connection between food, culture and storytelling, bringing together the Poinciana Magazine team's diverse perspectives and personal food memories in a shared culinary experience.
The inaugural British Colonial Brunch Takeover with Poinciana Magazine takes place on Sunday, October 25, at Tamarind Restaurant, offering guests an opportunity to experience Bahamian comfort food with a special Poinciana Magazine touch. The cost is $65 plus VAT and gratuity.
