From The Bahamas to Canada and beyond, Bahamian-born Chef Bri Bullard is making major strides on the international culinary scene, using her platform to showcase the rich flavours, traditions and creativity of Bahamian and Caribbean cuisine.

The internationally recognised chef, entrepreneur and founder of Authentique Delights has built an impressive culinary career, creating luxury dining experiences for celebrities along with global brands such as Netflix and Pinterest.

A winner of Canada's Culinary Clash of Chefs competition, Chef Bri has continued to expand her international reach while remaining deeply connected to her Bahamian roots.

During the Bahamas Culinary & Arts Festival, Chef Bri shared that her culinary mission is about more than preparing exceptional food. It's about changing perceptions of Caribbean cuisine and ensuring that Bahamian food receives the international recognition it deserves.

"Every time I mention The Bahamas and I'm from there, everybody talks about the sun, the sand and the sea, but our food is something so special."

For Chef Bri, bridging the gap between Caribbean cuisine and the global culinary scene means combining traditional island flavours and spices with techniques she's acquired internationally.

Her creations at the festival included a nostalgic fire engine sushi, featuring corned beef and rice, topped with avocado cream, plantain butter and charred corn aioli, along with a savoury oxtail cheesecake.

Through Poinciana Magazine's Caribbean Threads series, we're exploring the cultural connections that unite the region through food, art, music and storytelling, while celebrating the creatives carrying Caribbean culture onto the world stage.

We'll continue sharing more highlights from the talented chefs and artists we encountered during the FUZE Art Fair and Bahamas Culinary & Arts Festival.
