Where Art Meets Flavor: Chef Bri’s Culinary Showcase at Nassau Cruise Port

On March 22, Chef Bri hosted her first Edible Art Showcase at the Nassau Cruise Port, an event that blended culinary innovation with artistic expression. As the owner of Authentique Delights, the Toronto-based Bahamian chef has built a reputation for her unique approach to food, serving a diverse range of international clients. This special evening, held at The Gallery & Wine Bar, gave guests the opportunity to experience her cooking while admiring the Bahamian artwork displayed throughout the space.
The tasting menu featured seven carefully crafted courses, each designed as a flavorful two-bite experience, paired with four signature cocktails. The evening began with a coconut- and soursop-infused Golden Fashion, a tropical twist on the classic Old Fashioned, setting the tone for the culinary journey ahead. The first dish to be served was Oxtail Rangoon, a delicate balance of rich, braised oxtail and cream cheese wrapped in a crispy wonton, topped with a vibrant mango pepper jelly. Guests then indulged in shrimp stuffed with a lobster filling, a bite that showcased the freshness of Bahamian seafood.
The menu continued with Conch Confit, a creative reinterpretation of a traditional conch dish. This dish featured cracked conch layered with confit potatoes, all drizzled with a sweet-spicy calypso sauce, offering a harmonious blend of textures and flavors. Before moving on to the main courses, guests were presented with a Guava Passion Lime palate cleanser, a refreshing citrus burst that reset the taste buds for the next phase of the meal.
Next up was a Mutton et Bourbon Coconut, a dish that infused bold flavors with the richness of coconut, creating a uniquely comforting yet sophisticated bite. Following this was a Grouper Truffle Mac ‘N’ Cheese, where crispy grouper bites rested atop a creamy four-cheese truffle macaroni, offering a decadent take on a beloved comfort dish. The evening concluded on a sweet note with a Peach Cobbler Cheesecake, a rich and velvety dessert topped with spiced peaches. Chef Bri’s deep connection to food began in her childhood, growing up surrounded by home-cooked meals that brought family and friends together. "I've always been a chef at heart," she reflects. Her passion for flavor and innovation led her from the Bahamas to Toronto, where she developed her signature style, blending Caribbean influences with global techniques. In preparation for the Edible Art Showcase, Chef Bri envisioned an evening where food and art merged into one immersive experience. "I’m crafting a palette explosion with artistic appeal, unique flavors, and international influences, all woven with Bahamian undertones," she explained. Each dish was a reflection of her Contemporary Caribbean Fusion style, which she describes as a tribute to both her heritage and her culinary journey around the world. "I've had the privilege of working across the globe, embracing diverse culinary traditions while staying rooted in my Bahamian heritage," she says. "Every dish I create is a love letter to the islands, infused with global influences and prepared with the most important ingredient of all—love."
The success of the Edible Art Showcase marks just the beginning of what Chef Bri has planned.
